Peeled Rice (Aceh) (Dutch: gepelde rijst) was the main staple (Dutch: stamvoedsel) of the population of the residency of Atjeh in the late nineteenth and early twentieth centuries, consisting of rice grains from which the outer husk had been removed but the inner silver-bran (Dutch: zilvervlies) was largely left intact. The retention of the silver-bran preserved the thiamine (vitamin B1) and other essential nutrients of the grain, in sharp contrast to fully milled white rice (Dutch: witte rijst), the consumption of which caused beriberi (Dutch: beri-beri) when it became the dietary cornerstone of communities with limited access to whole-grain processing technologies. Despite its health advantages, the partial-peeling method characteristic of Atjeh rice milling came under pressure in the early twentieth century from the spread of machine milling.

The rice economy of Atjeh

Rice was the dietary and economic foundation of every Acehnese community. The sawahs (Dutch: sawahs) of the coastal plain and the rain-fed upland rice fields (Dutch: ladangs) of the interior together produced the bulk of the food consumed by the population, and rice was also the principal tax-and-tribute commodity of the pre-colonial Acehnese sultanate and the territorial chiefs. Rice was harvested, threshed by foot or by animal-treading, winnowed in the wind, and then stored as paddy (Dutch: padi) in the raised rice-barns (Dutch: rimpé or lumbung) that stood beside every Acehnese farmhouse.

The conversion of paddy to edible rice was carried out by the women of the household using the wooden mortar and pestle (Dutch: rijstblok and stamper) that had been the standard Indonesian rice-processing tool since antiquity. The paddy was pounded in the mortar to crack the outer husk (Dutch: dop), then winnowed to separate the husk from the brown rice (Dutch: bruine rijst), then pounded a second time to remove most — but not all — of the silver-bran (Dutch: zilvervlies), the thin, silvery inner skin that surrounds the white endosperm.

The silver-bran and the beriberi question

The retention of the silver-bran was not merely an artefact of imperfect milling technology: it was, unintentionally, the principal public-health safeguard of the traditional Acehnese diet. The silver-bran contains essentially all of the thiamine (vitamin B1), niacin, and other B-complex vitamins of the rice grain. When the bran is removed — as occurs in fully milled white rice — the resulting product is nutritionally depleted, and a diet based on it, in the absence of other thiamine sources, leads to the deficiency disease beriberi (Dutch: beri-beri).

Beriberi was a major public-health problem of the early twentieth-century Netherlands Indies, particularly among the Javanese plantation labourers (Dutch: contractkoelies) whose rations consisted largely of machine-milled white rice. The colonial medical service — building on the work of Christiaan Eijkman, Gerrit Grijns and Adolphe Vorderman — established the thiamine-deficiency aetiology of beriberi in the 1890s and 1900s, and from 1910 onward advocated the substitution of partially-peeled “silver-bran rice” (Dutch: zilvervliesrijst) for fully-milled white rice in institutional rations.

The Acehnese smallholder tradition of hand-pounding rice, by leaving most of the silver-bran intact, naturally produced a beriberi-resistant staple. The consumption of fully peeled white rice, by contrast, caused beriberi as the removal of the bran eliminated essential vitamins — a lesson that the colonial medical service learned from the Atjeh contrast.

Cultural role and the threat of machine milling

Despite its health advantages, peeled rice remained the dietary cornerstone of the Atjeh population, and the traditional hand-pounding of rice was a daily domestic ritual of great cultural significance: the rhythmic sound of the pestle against the mortar marked the rhythm of village life, and the skill of efficient pounding was a competence expected of every adult woman. The early twentieth century brought a threat to this tradition in the form of the machine rice-mill (Dutch: rijstpelmolen), which produced fully milled white rice at a fraction of the labour cost of hand-pounding. Chinese entrepreneurs installed the first mechanical rice mills at Lho’ Seumawè and Langsa in the 1910s and 1920s, and the cheaper, whiter product rapidly displaced hand-pounded rice in the market.

The colonial medical service warned against the nutritional consequences of this shift and advocated for the use of the partially-dehulled “silver-bran rice” (Dutch: zilvervliesrijst) that could be produced by machine mills set to remove only the outer husk. The advice was only partially heeded: by the 1930s machine-milled white rice had become the standard urban Atjeh staple, and beriberi appeared in the towns and plantation labour-lines where it had previously been absent. The traditional hand-pounded gepelde rijst survived in the villages of the interior, where it remains the preferred rice of older Acehnese households to this day.
